It sounds like you're trying to use Mapache on OS X Tiger. It will not work - Leopard is the minimum system requirement. Sorry!
To uninstall, simply remove the preference pane from: ~/Library/PreferencePanes/ or if you installed it for all users: /Library/PreferencePanes/

I use macports and have a separate apache install due to the 64-bit nature of the stock leopard apache. Do you know of a preference pane which could start and stop apache installed at a different location e.g. /opt/local/apache2?

No, but it would be very easy to write a script that could do that for you. Either way, with the upcoming release of Snow Leopard, the need to run a 32-bit version of Apache would surely stop making sense?

Hi, I'm Mike live in Portland Or. I am interested in learning how to control a website from my home mac pro. But I know almost nothing about this except that Mapache was something I thought might help me. So Installed Mapache without knowing anything and thought I could play around and see if I could actually create a design on the apache web page that shows up when enabling "Websharing" in system preferences. All I wanted to try and do is control a web page from MY computer ON my computer without an outside server for help of anykind. The one problem I could really use help on is how to completely remove Mapache as when I install or uninstall the preference pane I get thousands of log messages still saying:( httpd: could not open configuration file /private/etc/apache2/httpd.config: No such file or directory) Any help on anything I said would be appreciated.
